Cook 1 cup basmati rice per package instructions. For chutney, combine ½ cup diced mango, ¼ cup finely diced red onion, 1 tbsp grated ginger, 1 tbsp apple cider vinegar (or lime juice), and 1 tbsp brown sugar in a small pan. Luckily for us, that same ink is also delicious. Rich in umami with a hint of ocean brine, it has been prized in Mediterranean cooking for centuries. Squid are typically caught at night, when they rise closer to the surface and are drawn to light. This method is both selective and low-impact, helping to protect marine ecosystems.
Easy Arroz Negro
“Black rice” is a traditional Catalonian dish made with squid and its ink. Warm 1T of olive oil in a pan and sauté one chopped garlic clove and a tablespoon of minced shallot until soft. Add the full tin of La Barca Squid in Ink, stirring gently to coat the aromatics. Fold in 1 cup of cooked short-grain rice, letting it absorb all that inky goodness. We found it at a Japanese market in Boston while looking for a quick snack and had barely explored tinned fish before. One bite and we knew more people needed to experience flavors like this.
Sanma Kabayaki Rice Bowl
Cook ½ cup short grain, sushi or jasmine rice. Spoon the hot rice into a bowl and lay the sanma over the top, pouring the glossy soy glaze from the tin onto the rice. Inside is a smooth tuna pâté made for the easiest kind of snack: toast, crackers, cucumber rounds, or whatever is nearby when appetites start circling. Tuna pâté also has a neat literary footnote. In her 1955 cookbook Summer Cooking, Elizabeth David helped popularize a simple recipe called “Pâté of Tunny Fish,” made with tinned tuna, butter, lemon, and pepper. Before blenders were common, that meant pounding everything together by hand. Thankfully, José Gourmet has already done the work for us. Open the tin, spread it generously, and add a few capers, a cornichon, or a squeeze of lemon.

It is herring transformed by salt and smoke. Herring's naturally rich flesh is especially well suited to the process, staying tender while taking on deep hardwood flavor. For generations, kippers have been a staple of traditional British and Canadian breakfasts. This batch of freshly caught Bay of Fundy herring was delivered to Kersen's waterfront cannery in Yarmouth, Nova Scotia, where it was naturally smoked without chemicals or additives, hand-packed, canned, and shipped straight to us. Expect boneless fillets with soft flakes, clean ocean salinity, and a mellow campfire finish.
Maritime Kipper Fish Cakes
Mash 1 large cooked potato and let cool slightly. Drain and flake the kippers, then fold them into the potatoes with 1 beaten egg, sliced green onion, a spoonful of Dijon, a squeeze of lemon, and cracked black pepper. Shape into 6 small cakes and coat lightly with breadcrumbs. Heat a thin layer of butter or oil in a skillet over medium heat and cook for 3 to 4 minutes per side, until crisp and golden. Serve with a fried egg for breakfast or tangy pickles on the side.

Another says it was inspired by Nuria, a Spanish woman loved by one of the company's well-traveled founders. Either way, the name fits. These sardines are still prepared and wrapped by hand, then dressed in olive oil with chili, clove, black pepper, bay leaf, cucumber, and carrot. This extra spicy version gets three piri-piri peppers per tin, then rests for at least three months so the heat can work through the fish and oil. Bold, fragrant, and properly punchy, this is Nuri with the volume turned up.

Açôr, Portuguese for goshawk, began in the 1930s as a premium brand of Lisbon distributor P. Martins. The historic label was later revived, and Faropeixe now develops it in Olhão, in the Algarve, complete with its striking Art Deco bird-and-fish design. Inside, the recipe is beautifully simple: sardines, olive oil, and salt. The fish are silvery and carefully packed, with a meaty bite and a clean, balanced flavor that lets the sardine take center stage. We were lucky enough to secure enough of this newly crowned tin to share with the club. Open it carefully. These are sardines worth admiring before the first bite.

Bacalhau Egg Salad
Boil, peel, and slice two medium eggs. Chop half a red bell pepper and a ¼ white onion. Soak the onion in hot water to lessen its bite. Combine ½ can rinsed chickpeas, drained chopped onion, bell pepper, and your tinned cod. Dress with the garlic olive oil from the tin, ½T red wine vinegar, salt and pepper to taste, mix well, and top with egg slices. (Note: we used the whole can of chickpeas and got in lots of protein!)
