Classic Nordic Flavors with Lunchtime Flair

This cozy sandwich leans into classic Nordic flavors—creamy yogurt, sharp mustard, crisp veg, and delicate brisling sardines. It’s equal parts bracing and comforting, the kind of thing you eat slowly with a hot mug nearby and no plans for the rest of the afternoon.

We had ours in a standard sandwich form, but this one's great open-faced, too, especially if the eggs are still a little warm. Ingredients

  • ⅓ cup plain Greek yogurt
  • 1–2 teaspoons Dijon mustard (to taste)
  • Rye bread, sliced. (And maybe toasted just a tiny bit.)
  • Lettuce leaves
  • Thinly sliced red onion
  • 1 hard-boiled egg, sliced
  • 1 tin brisling sardines, drained or lightly oiled
  • Fresh dill, for garnish
  • Lemon wedge
  • Salt and freshly ground black pepper
  • Instructions

    1. In a small bowl, mix the Greek yogurt with Dijon mustard until smooth. Season lightly with salt and pepper.
    2. Toast the rye bread if desired, then spread a generous layer of the yogurt-mustard sauce on each slice.
    3. Layer with lettuce, cucumber, red onion, and slices of hard-boiled egg.
    4. Flake the brisling sardines over the top, keeping them chunky and intact.
    5. Garnish with fresh dill and finish with a squeeze of lemon.

    We admit it: This one is tough to keep together wrapped or carried. But this sandwich isn't for a busy workday. It's best enjoyed when it’s cold outside and you’ve got nowhere to be.
