Roasted Radishes & Plump Sardines Over Greens

What happens when you combine superfoods? You get something that's as healthy as can beand incomparably delicious. This rustic kale, radish, and sardine bowl turns a tin of sardines into a full, flavorful meal. Sweet roasted radishes, garlicky greens, and rich olive oil from the tin make this one feel both cozy and a little fancy.

We used Siesta Co Sardines from our September 2025 Box--the oil and flavor profile is just perfect for this recipe--but we encourage you try other sardines as well!

Ingredients

  • 1 small bunch radishes, halved
  • salt & black pepper
  • 4 cups collard greens or kale, sliced
  • 2 garlic cloves, minced
  • 1 tin sardines (in olive oil)
  • Lemon wedge
  • Fresh herbs (parsley, dill, or chives)

Kale and Sardine Instructions

  1. Roast the radishes:
    Toss halved radishes with olive oil, salt, and pepper. Arrange cut-side down on a baking sheet and roast at 425°F for 20 minutes until golden and caramelized underneath.
  2. Sauté the greens:
    Warm a skillet over medium heat with a drizzle of olive oil. Add garlic and sauté 30 seconds. Add greens, salt lightly, and cook until just wilted and still vibrant. Careful! The greens cook down fast.
  3. Assemble:
    • Spoon the garlicky greens into a shallow bowl.
    • Add roasted radishes over top.
    • Gently lift sardines from the tin and nestle them in.
    • Drizzle the tin’s olive oil over everything.
  4. Finish:
    Squeeze fresh lemon across the bowl and scatter herbs before serving.
